James Bond can keep his Martinis, Mr Stovies is quite a fan of them too but for Mrs Stovies it’s got to be a Tom Collins. Refreshing, light and as easy to drink as lemonade, it’s a wonder why alcopops were invented when this is around!
2 parts Gin
1 part Lemon juice, freshly squeezed
1/2 part Gomme syrup (if you don’t have any melt 1 part sugar with 1 part water and allow to cool)
A handful of ice cubes
Put the gin, lemon and gomme into a cocktail shaker with a handful of ice cubes, shake until frost forms on the outside. Fill a tall glass* with with more ice, pour the lemony mixture in and top up with soda.
Recline and imbibe.
*Yes, it’s a wine glass. Doing the dishes was so not a priority.
