Feeling hot, hot hot!

We’re going to be posting a couple of recipes this week that use our chilli spice mix. Rather than typing it out each time and because it is a real store cupboard staple it deserves a post all of its own.

 

Stovies’ Special Chilli Spice Mix

80g Dried onion
40g Chilli powder
40g Cocoa powder
40g Mild curry powder
20g Cumin powder
5g Smoked paprika
5g Dried oregano
2g Salt
2g White pepper
2g Coriander powder
1g Cinnamon
A pinch of caraway seed
A pinch of allspice
1 Dried ancho chilli
2 Dried chipotle chillies

Quite simply mix it all together. Life will be a lot easier if you chop the ancho and chipotle chillies using a blender, if not just chop very finely and then use a pestle and mortar to break them down into a powder. Store in an airtight container until it runs out.
